Watercress and Citrus Salad

1. Combine watercress, orange supremes and juice, grapefruit supremes and juice, extra virgin olive oil and salt. Gently toss to combine and serve immediately.
2 bunches Upland watercress, leaves with small parts of stems attached only
1 orange, supremed and juice reserved
1 grapefruit, supremed and juice reserved
1 tablespoon plus 1 teaspoon orange juice
1 tablespoon plus 1 teaspoon grapefruit juice
2 tablespoons extra virgin olive oil
1/8 teaspoon kosher salt
